
These gluten-free cookies are a wonderful and easy dessert to bring to parties for holidays, birthdays and cook-outs. And don’t worry if you or your friends are not on a gluten free diet, they will probably not even notice they are gluten-free because they are so tasty!
Like seen in the picture, you can even add some natural food coloring to make them look extra festive! The pictured ones were tinted pink for a baby-shower, but with St Patrick’s Day just days away why not try this recipe out and make them green!
Ingredients
- 2 1/4 cups Gluten-Free all-purpose flour ( Doves Farms is a great flour for this)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks)softened butter
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup milk chocolate chips
- 1 cup dark chocolate chips or semi sweet chocolate chips
Directions
PREHEAT oven to 190°C Gas Mark 5
COMBINE gluten-free flour, baking soda and salt in a bowl. Beat the butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamed well. Add the two eggs, one at a time, beat well after each addition. Gradually beat in flour mixture. Stir in the chocolate chips. Drop by rounded tablespoon onto ungreased baking sheets lined with parchment paper
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; transfer cookies to wire racks to finish cooling.
